Chicken Tortilla Casserole


This dish requires Mexican Seasoning and because I have allergic reactions to most Taco/Mexican Seasonings I make my own. So here is a easy recipe if you would like to make your own seasoning.

2t salt
2t ground cumin
2t chili powder
2t ground coriander
2t onion powder
1t dried oregano
1/2t cane sugar
1/2t ground black pepper
1/4t chipotle chili powder




2 cans diced tomatoes with green chilies
1t Mexican seasoning
1/2 cup chopped fresh cilantro
2 cups shredded cooked chicken
1 1/3 grated Monterey Jack cheese
1 1/3 grated cheddar cheese
10 tortillas
1/2 cup sliced pitted black olives
1/2 cup homemade guacamole
1/4 cup sour cream

1. Preheat oven 400. Grease 2 pie plates.
2. In a bowl combine tomatoes, seasoning and 1/3 cup of the cilantro to make sauce. Stir in chicken. Mix cheese together in a separate bowl.
3. Place one tortilla in pie plate. Top with 1/4 cup of tomato mixture and 1/4 cup of cheese. Repeat this layer 3X. Top with 5th tortilla and sprinkle 1/3 cup of cheese on top. Repeat the process for the 2nd pie plate. Cover the plates with foil.
4. Bake 12 to 15 minutes till sauce is bubbly. Remove cut each casserole either in half or in fourths to serve. Garnish with black olives, guacamole, sour cream and remaining cilantro.
