Blonde Chili

1 T oil
3 lbs cooked chicken, cubed
1 cup onion
2 cups chicken broth
2 (4oz) cans chopped green chili peppers
5 (14.5 oz) cans great northern beans, undrained
1 T garlic powder
1 T ground cumin
1 T dried oregano
2 T chopped fresh cilantro
1 t crushed red peppers

In large sauce pan bring broth and green chili peppers to a boil. Stir in 3 cans of beans, garlic powder, cumin, oregano, cilantro and red peppers. Stir in the chicken and onions, reduce heat. Simmer 30 min or longer adding additional beans for thicker consistency as desired.


Just throw everything in the pot and let simmer till it's tasty. That's what I do.
